Ingredients:
400g cream
250g dark chocolate (chopped)
350g water

75g glucose
180g cocoa powder

Method:
Boil the cream and pour over the chocolate to melt it.
Set aside.

Put the water, sugar and glucose in a saucepan, bring to the boil.
Add the cocoa powder and simmer for 5 minutes, whisking constantly.

whisk (off the heat) till everything is combined.
Strain the sauce, and let it cool.
